They can aid cross-contamination, and can often lead to people being slack with their hygiene standards. The handling of money whilst wearing gloves being the obvious one pointed out. They also reduce dexterity, and therefore can make life more tricky when using things like knives.The Food Standards Agency comment on gloves is simple: "disposable gloves should never be used as an alternative to hand washing."
